Tikka Masala Cauliflower Tacos with Coconut Yogurt Drizzle

For the Coconut Yogurt Drizzle:

  • 1/4 cup plain coconut yogurt

  • Juice of 1/4 lemon

  • Pinch of salt

  • Optional: 1 tsp chopped cilantro or mint

For the Tacos:

  • 4 grain-free or whole grain tortillas

  • 1/2 cup shredded red cabbage

  • 1/4 cup chopped cucumber

  • 1 tbsp chopped cilantro

  • Optional: mango chunks or pomegranate arils for sweetness

Instructions:

  • Preheat oven to 425°F. In a bowl, whisk together coconut yogurt, tomato paste, olive oil, garlic, ginger, and spices. Toss cauliflower florets in the mixture until coated.
  • Spread cauliflower on a parchment-lined baking sheet and roast for 20–25 minutes, flipping halfway.
  • Meanwhile, mix drizzle ingredients in a bowl and set aside.
  • Warm tortillas and assemble with shredded cabbage, roasted tikka cauliflower, cucumber, and cilantro.
  • Top with coconut yogurt drizzle and optional mango or pomegranate.
