Tikka Masala Cauliflower Tacos with Coconut Yogurt Drizzle

Posted by Manjeri Skincare Team on

Benefits:
Cauliflower is rich in antioxidants and sulfur compounds that detox the skin and reduce inflammation. Coconut yogurt offers probiotics to balance the gut and improve clarity, while the masala spices (like turmeric and ginger) improve circulation and even skin tone from within. All wrapped in a taco for a satisfying glow-boosting meal.

Skin Concern: Breakouts, dullness, uneven tone

  • 1 tsp grated fresh ginger

  • 1/2 tsp turmeric

  • 1/2 tsp cumin

  • 1/2 tsp coriander

  • Sea salt and pepper to taste

For the Coconut Yogurt Drizzle:

For the Tacos:

  • 4 grain-free or whole grain tortillas

  • 1/2 cup shredded red cabbage

  • 1/4 cup chopped cucumber

  • 1 tbsp chopped cilantro

  • Optional: mango chunks or pomegranate arils for sweetness

Instructions:

  • Preheat oven to 425°F. In a bowl, whisk together coconut yogurt, tomato paste, olive oil, garlic, ginger, and spices. Toss cauliflower florets in the mixture until coated.
  • Spread cauliflower on a parchment-lined baking sheet and roast for 20–25 minutes, flipping halfway.
  • Meanwhile, mix drizzle ingredients in a bowl and set aside.
  • Warm tortillas and assemble with shredded cabbage, roasted tikka cauliflower, cucumber, and cilantro.
  • Top with coconut yogurt drizzle and optional mango or pomegranate.

Shopping Tips:

  • Coconut Yogurt: Look for unsweetened, probiotic-rich yogurt for skin and gut health.

  • Cauliflower: Use fresh, firm heads for best flavor and texture.

  • Spices: Use organic, high-quality turmeric and cumin for maximum anti-inflammatory benefits.

Cooking Tips:

  • For deeper flavor, marinate the cauliflower in the yogurt-spice mix for 15–30 minutes before roasting.

  • Add a dollop of avocado crema or a quick cucumber raita for extra skin nourishment.

  • Broil the cauliflower for 1–2 minutes at the end if you like extra char.

These tacos are fiery, cooling, vibrant, and ultra-nourishing—perfect for glowing skin and a spicy flavor escape.
