Sweet Potato Breakfast Burrito

Ingredients:

  • 1 medium sweet potato, peeled and diced

  • ½ tsp olive oil

  • ¼ tsp smoked paprika

  • Pinch sea salt

  • 2 eggs

  • ½ cup black beans, rinsed and drained

  • 1 small avocado, sliced

  • ¼ cup diced tomatoes

  • 2 whole wheat tortillas

  • 2 tbsp Greek yogurt or dairy-free yogurt

  • 1 tbsp chopped cilantro

Instructions:

  • Cook the Sweet Potatoes: Heat olive oil in a skillet over medium heat. Add diced sweet potatoes, smoked paprika, and sea salt. Cook for about 10–12 minutes until tender and lightly golden.

  • Scramble the Eggs: In a small bowl, whisk the eggs. Push the sweet potatoes to one side of the skillet and pour the eggs into the empty space. Cook gently while stirring until softly scrambled.

  • Warm the Beans: Add black beans to the skillet and cook for another 2 minutes until heated through.

  • Prepare the Tortillas: Warm tortillas briefly in a pan or microwave until soft and flexible.

  • Assemble the Burritos: Divide the sweet potato, egg, and bean mixture between the tortillas. Top with avocado slices, diced tomatoes, Greek yogurt, and chopped cilantro.

  • Wrap and Serve: Fold in the sides and roll tightly into burritos. Serve warm.
