Soft Scrambled Eggs with Zucchini & Basil Sauté

Posted by Manjeri Skincare Team on

Benefits: Eggs provide high-quality protein and biotin, essential for skin regeneration. Zucchini hydrates from within and basil calms inflammation, making this a light yet deeply nourishing start.

Skin Concern: Dull, dry skin; uneven texture

Prep Time: 10 minutes | Serves: 2

Ingredients:

  • 4 eggs

  • 1 small zucchini, thinly sliced

  • 1 tbsp olive oil

  • 1 tbsp chopped fresh basil

  • ¼ tsp garlic powder

  • Salt and pepper to taste

Instructions:

  • Sauté Zucchini: Heat olive oil in a pan over medium heat. Add zucchini and garlic powder. Cook until soft, about 5 minutes.

  • Scramble Eggs: Whisk eggs and pour into the pan. Gently stir with a spatula until softly scrambled.

  • Finish: Remove from heat, fold in fresh basil, and season to taste.

  • Serve: Plate immediately with a side of sliced avocado or toasted sourdough.

Shopping Tips:

  • Eggs: Choose pasture-raised eggs for higher omega-3s and vitamin D.

  • Zucchini: Look for firm, glossy skin with no bruises.

Cooking Tips:

  • Extra glow: Add a drizzle of hemp oil before serving for added essential fatty acids.

  • Protein boost: Pair with a side of smoked salmon or hummus toast.

This savory dish hydrates, heals, and supports skin cell turnover for a healthy morning glow.
