Cuban Mojo Salmon Tacos with Avocado Crema

Ingredients:

  • 2 salmon fillets

  • 4 corn tortillas

  • 1/4 red onion, thinly sliced

  • Olive oil for searing

Mojo Marinade:

  • Juice of 1 orange

  • Juice of 1 lime

  • 2 garlic cloves, minced

  • 1 tbsp olive oil

  • 1/2 tsp ground cumin

Avocado Crema:

  • 1/2 avocado

  • 1 tbsp lime juice

  • 1 tbsp water

  • Pinch of sea salt

Instructions:

  • Marinate Salmon: In a small bowl, whisk all mojo marinade ingredients. Pour over salmon and marinate for 15–30 minutes.

  • Cook Salmon: Heat olive oil in a skillet over medium-high. Sear salmon fillets for 3–4 minutes per side until cooked through.

  • Make Avocado Crema: Blend avocado, lime juice, water, and salt until smooth and creamy.

  • Assemble Tacos: Warm tortillas, flake the salmon, and build tacos with salmon, red onion, and a generous drizzle of avocado crema.
