BBQ Chicken with Charred Corn Salad & Avocado-Lime Drizzle

Posted by Manjeri Skincare Team on

Benefits:
Chicken provides lean protein and zinc to support collagen production and skin repair. Charred corn delivers beta-carotene for a natural glow, while avocado and lime offer hydrating fats and brightening vitamin C to fight dullness and dryness.

Skin Concern: Dullness, dehydration, inflammation

Prep Time: 20 minutes | Cook Time: 20 minutes | Serves: 2

Ingredients:

For the Chicken:

  • 4 bone-in, skin-on chicken thighs

  • 1/2 tsp smoked paprika

  • 1/2 tsp garlic powder

  • 1/4 tsp ground cumin

  • Sea salt and black pepper to taste

  • 1/2 cup clean BBQ sauce (low sugar, tomato-based)

  • 1 tsp olive oil

For the Charred Corn Salad:

  • 1 cup corn kernels (fresh or thawed frozen)

  • 1/4 red bell pepper, diced

  • 1/4 red onion, finely chopped

  • 1 tbsp lime juice

  • 1 tbsp chopped cilantro

  • Sea salt to taste

For the Avocado-Lime Drizzle:

  • 1/2 ripe avocado

  • Juice of 1/2 lime

  • 1 tbsp plain yogurt or olive oil

  • Pinch of sea salt

  • Water, as needed to thin

Instructions:
Rub chicken with smoked paprika, garlic powder, cumin, salt, and pepper. Sear skin-side down in olive oil over medium heat until golden, 3–4 minutes. Flip, brush with BBQ sauce, and bake at 400°F for 15–18 minutes or until cooked through.
Char corn in a dry skillet over high heat until lightly blackened. Toss with red bell pepper, onion, lime juice, cilantro, and salt.
For the drizzle, blend avocado, lime juice, yogurt or oil, and salt until creamy, thinning with water as needed.
To serve, plate chicken with a scoop of corn salad and a generous drizzle of avocado-lime sauce.

Shopping Tips:

  • Chicken: Choose organic or pasture-raised for better flavor and skin-boosting nutrients.

  • BBQ Sauce: Opt for clean-label, low-sugar sauces free of additives or refined oils.

  • Avocado: Pick ripe, soft avocados with no sunken spots for best texture.

Cooking Tips:

  • Broil chicken for the last 2–3 minutes for extra-crispy skin.

  • Double the avocado sauce—it makes a great dip or spread the next day.

  • Charred corn adds smokiness and flavor depth, even without a grill.

This nourishing twist on BBQ comfort food hits all the right notes. It's glow-worthy, satisfying, and perfect for a summer dinner or weekend reset.
