BBQ Chicken with Charred Corn Salad & Avocado-Lime Drizzle

Ingredients:

For the Chicken:

  • 4 bone-in, skin-on chicken thighs

  • 1/2 tsp smoked paprika

  • 1/2 tsp garlic powder

  • 1/4 tsp ground cumin

  • Sea salt and black pepper to taste

  • 1/2 cup clean BBQ sauce (low sugar, tomato-based)

  • 1 tsp olive oil

For the Charred Corn Salad:

  • 1 cup corn kernels (fresh or thawed frozen)

  • 1/4 red bell pepper, diced

  • 1/4 red onion, finely chopped

  • 1 tbsp lime juice

  • 1 tbsp chopped cilantro

  • Sea salt to taste

For the Avocado-Lime Drizzle:

  • 1/2 ripe avocado

  • Juice of 1/2 lime

  • 1 tbsp plain yogurt or olive oil

  • Pinch of sea salt

  • Water, as needed to thin

Instructions:
Rub chicken with smoked paprika, garlic powder, cumin, salt, and pepper. Sear skin-side down in olive oil over medium heat until golden, 3–4 minutes. Flip, brush with BBQ sauce, and bake at 400°F for 15–18 minutes or until cooked through.
Char corn in a dry skillet over high heat until lightly blackened. Toss with red bell pepper, onion, lime juice, cilantro, and salt.
For the drizzle, blend avocado, lime juice, yogurt or oil, and salt until creamy, thinning with water as needed.
To serve, plate chicken with a scoop of corn salad and a generous drizzle of avocado-lime sauce.
