Chicken Salad BLT Sandwich

Ingredients:

For the Chicken Salad:
2 cups cooked chicken breast, finely chopped or shredded
2 tbsp olive oil–based mayonnaise or avocado mayo
1 tsp Dijon mustard
Juice of 1/2 lemon
Sea salt and black pepper to taste
1 tbsp finely chopped celery or chives (optional)

For Assembly:
4 slices sourdough or whole-grain bread, lightly toasted
4 slices cooked bacon
1 medium tomato, sliced
Butter lettuce or romaine leaves

Instructions:
Prepare the chicken salad by adding the chopped chicken to a bowl and mixing with mayonnaise, Dijon mustard, lemon juice, salt, and pepper until lightly coated. Fold in celery or chives if using.

Assemble the sandwiches by layering lettuce leaves on two slices of toasted bread, followed by tomato slices, chicken salad, and crispy bacon. Top with remaining bread slices and gently press to set.

Serve immediately or wrap and chill briefly to allow flavors to meld before enjoying.
