Marry Me Chicken with Creamy Sun-Dried Tomato Sauce

Ingredients:

For the Marry Me Chicken:
2 boneless, skinless chicken breasts
Sea salt and black pepper to taste
1 tsp paprika
1 tbsp olive oil

For the Creamy Sun-Dried Tomato Sauce:
3 cloves garlic, minced
1/3 cup sun-dried tomatoes, chopped (oil-packed, drained)
1/2 cup full-fat coconut milk or heavy cream
1/2 cup low-sodium chicken broth
1/4 cup freshly grated parmesan cheese
1 tsp Italian seasoning
Pinch of chili flakes, optional

For the Mashed Potatoes:
1 lb Yukon gold potatoes, peeled and cubed
2 tbsp butter or olive oil
1/3 cup warm milk or dairy-free alternative
Sea salt to taste

For the Green Beans:
8 oz fresh green beans, trimmed
1 tbsp olive oil or butter
Pinch of sea salt
Fresh cracked black pepper

Instructions:
Prepare the mashed potatoes by placing the cubed potatoes in a pot of salted water. Bring to a boil and cook until fork-tender, about 15–18 minutes. Drain, then mash with butter, warm milk, and salt until smooth and creamy. Cover and keep warm.

Season the chicken breasts with salt, pepper, and paprika. Heat olive oil in a large skillet over medium heat and sear the chicken for 4–5 minutes per side until golden. Remove from the skillet and set aside.

In the same skillet, add garlic and sauté until fragrant. Stir in the sun-dried tomatoes, coconut milk or cream, chicken broth, parmesan, Italian seasoning, and chili flakes if using. Bring to a gentle simmer, stirring until the sauce thickens slightly.

Return the chicken to the skillet, spooning sauce over the top. Reduce heat to low, cover, and simmer for 12–15 minutes until the chicken is cooked through and tender.

While the chicken finishes, prepare the green beans by heating olive oil or butter in a pan over medium heat. Add green beans, season lightly with salt and pepper, and sauté for 5–7 minutes until tender-crisp and vibrant green.

To serve, spoon mashed potatoes onto plates, top with the creamy marry me chicken and sauce, and add green beans on the side.
