Instructions:
Prepare the mashed potatoes by placing cubed potatoes in a pot of salted water. Bring to a boil and cook for 15–18 minutes until fork-tender. Drain and mash with butter, warm milk, and salt until smooth. Cover and keep warm.
Prepare the spinach filling by mixing softened cream cheese, chopped spinach, garlic, parmesan, salt, and pepper in a bowl until well combined.
Preheat the oven to 400°F. Pat the salmon fillets dry and season lightly with salt and pepper. Using a sharp knife, carefully cut a slit lengthwise into each fillet to create a pocket. Spoon the spinach cream cheese filling evenly into each salmon fillet.
