British Jacket Potato with Tuna

Ingredients:

For the Jacket Potatoes:
2 large russet or baking potatoes
1 tbsp olive oil
Sea salt to taste
Butter, for serving

For the Tuna Mayo:
1 can high-quality tuna, drained
2 tbsp olive oil mayonnaise or avocado mayo
Juice of 1/4 lemon (optional)
Sea salt and black pepper to taste

For the Toppings:
1 cup baked beans, warmed
1/2 cup grated cheddar or mature cheese
1/4 small red onion, finely chopped

Instructions:
Prepare the jacket potatoes by preheating the oven to 425°F. Scrub and dry the potatoes, prick them a few times with a fork, rub lightly with olive oil, and sprinkle with salt. Place directly on the oven rack or a baking tray and bake for 55–60 minutes until the skins are crisp and the insides are fluffy.

While the potatoes bake, prepare the tuna mayo by mixing the drained tuna with mayonnaise, lemon juice if using, salt, and pepper until well combined. Set aside.

Once the potatoes are cooked, slice each one open lengthwise and fluff the inside gently with a fork. Add a knob of butter to melt into the potato.

Top each jacket potato with warm baked beans, grated cheese, and a generous spoon of tuna mayo. Finish with a sprinkle of chopped red onion.

Serve immediately while hot and comforting.
