Smoked Salmon Eggs Benedict with Avocado & Lemon-Dill Hollandaise

Ingredients:

Base & Toppings:

  • 2 English muffin halves (or gluten-free alternatives)

  • 4 slices smoked salmon

  • 1/2 avocado, sliced

  • 2 eggs, poached

  • Optional: fresh dill, microgreens, or thin cucumber slices for garnish

Lemon-Dill Hollandaise:

  • 2 egg yolks

  • 2 tbsp lemon juice

  • 1/4 cup melted ghee or grass-fed butter

  • 1 tbsp finely chopped fresh dill

  • Pinch of sea salt

  • Optional: small pinch of cayenne for warmth

Instructions:
Toast the English muffin halves until golden. Top each with a layer of smoked salmon and sliced avocado.
Poach the eggs in gently simmering water with a splash of vinegar for 3–4 minutes, until the whites are set and the yolks remain runny.
In a heatproof bowl over a double boiler, whisk the egg yolks and lemon juice continuously until they begin to thicken. Slowly drizzle in the melted ghee or butter, whisking until smooth and glossy. Stir in chopped dill, salt, and cayenne if using.
Top each muffin with a poached egg and spoon the warm hollandaise over the top. Garnish with extra dill or microgreens and serve immediately.
