Roasted Cauliflower Tacos with Avocado Crema

Ingredients:

For the Roasted Cauliflower:

  • 1 small head cauliflower, cut into florets

  • 1 tbsp olive oil

  • 1 tsp smoked paprika

  • 1/2 tsp ground cumin

  • 1/2 tsp garlic powder

  • 1/4 tsp turmeric (optional)

  • Sea salt and pepper to taste

For the Tacos:

  • 4 small corn or almond flour tortillas

  • 1/2 cup shredded red cabbage

  • 1/4 cup chopped cilantro

  • 1/4 cup diced red onion

  • Juice of 1/2 lime

For the Avocado Crema:

  • 1 ripe avocado

  • 1/4 cup Greek yogurt or coconut yogurt

  • Juice of 1/2 lime

  • 1 tbsp olive oil

  • Sea salt to taste

Instructions:

  • Preheat oven to 425°F. Toss cauliflower with olive oil, paprika, cumin, garlic powder, turmeric, salt, and pepper.
  • Spread on a baking sheet and roast for 20–25 minutes, flipping halfway, until golden and crispy on the edges.
  • Blend all avocado crema ingredients until smooth. Add a splash of water to thin, if needed.
  • Warm tortillas and layer with red cabbage, roasted cauliflower, onion, and cilantro.
  • Drizzle generously with avocado crema and a squeeze of lime.
