Stuffed Chicken with Garlic Mashed Potatoes & Roasted Broccoli

Ingredients:

For the Stuffed Chicken:

  • 2 boneless, skinless chicken breasts

  • 1/2 cup chopped spinach (fresh or thawed frozen)

  • 1/4 cup chopped sun-dried tomatoes (oil-packed, drained)

  • 1/4 cup soft goat cheese or dairy-free cream cheese

  • 1 garlic clove, minced

  • 1 tbsp olive oil

  • Sea salt and black pepper to taste

  • Toothpicks or cooking twine

For the Garlic Mashed Potatoes:

  • 2 medium Yukon gold potatoes, peeled and chopped

  • 2 cloves garlic, peeled

  • 2 tbsp olive oil or ghee

  • 1/4 cup unsweetened oat milk or coconut milk

  • Sea salt to taste

  • Optional: chopped parsley for garnish

For the Roasted Broccoli:

  • 2 cups broccoli florets

  • 1 tbsp olive oil

  • 1/2 tsp lemon zest

  • Sea salt and black pepper to taste

  • Optional: red chili flakes or nutritional yeast

Instructions:

1. Prep the Stuffed Chicken:
Preheat oven to 400°F. Slice each chicken breast horizontally to create a pocket. Mix spinach, sun-dried tomatoes, goat cheese, and garlic in a bowl. Stuff into each chicken breast and secure with toothpicks. Season with salt and pepper.
Heat olive oil in an oven-safe skillet. Sear stuffed chicken 2–3 minutes per side, then transfer to the oven and bake for 15–18 minutes or until cooked through.

2. Make the Mashed Potatoes:
Boil potatoes and garlic cloves in salted water for 15–18 minutes until tender. Drain and mash with olive oil, oat milk, and sea salt. Stir until creamy. Garnish with chopped parsley.

3. Roast the Broccoli:
Toss broccoli florets with olive oil, lemon zest, salt, and pepper. Spread on a baking sheet and roast for 15–18 minutes, until golden and crisp-tender.

4. Assemble:
Plate a scoop of garlic mashed potatoes, a stuffed chicken breast, and a generous helping of roasted broccoli. Drizzle any pan juices over the chicken for extra glow and flavor.
