New Orleans Creole Gumbo (Seafood + Okra)

Prep Time: 15 minutes | Cook Time: 45 minutes | Serves: 2

Ingredients:

  • 1/2 lb wild shrimp, peeled

  • 1/2 cup lump crab meat

  • 1/2 cup sliced okra

  • 1/2 onion, chopped

  • 1/2 bell pepper, chopped

  • 1 garlic clove, minced

  • 1 cup chopped tomatoes

  • 2 cups fish or veggie broth

  • 1 tbsp olive oil

  • 1 tsp Creole seasoning

Instructions:

  • Sauté Veggies: In a pot, heat olive oil. Sauté onion, pepper, garlic, and okra until tender.

  • Simmer: Add tomatoes, seasoning, and broth. Simmer for 20–30 minutes.

  • Add Seafood: Stir in shrimp and crab. Simmer until shrimp is pink and cooked through (5–7 mins).

  • Serve: Garnish with scallions and serve over wild rice or millet.
