Lemongrass Coconut Chicken with Steamed Greens

Prep Time: 15 minutes | Cook Time: 20 minutes | Serves: 2

Ingredients:

  • 2 boneless chicken thighs

  • 1 stalk lemongrass, bruised

  • 1 cup coconut milk

  • 1 tsp fish sauce or coconut aminos

  • 1 clove garlic

  • 1 tsp grated ginger

  • Steamed bok choy or spinach, for serving

Instructions:

  • Simmer Chicken: In a saucepan, combine chicken, lemongrass, garlic, ginger, and coconut milk. Simmer for 15–20 minutes.

  • Finish: Remove lemongrass, season with fish sauce or coconut aminos.

  • Serve: Spoon over steamed greens.
