Maple-Whipped Sweet Potatoes

Benefits: Sweet potatoes are rich in beta-carotene to brighten the skin, maple syrup adds antioxidants, and a touch of coconut milk nourishes from within with healthy fats.

Prep Time: 10 minutes | Cook Time: 30 minutes | Serves: 4

Ingredients:

  • 2 large sweet potatoes, peeled and cubed

  • 1/3 cup coconut milk

  • 1 tbsp pure maple syrup

  • 1/4 tsp ground cinnamon

  • Sea salt to taste

Instructions:

Boil: Cook sweet potato cubes in salted water for 15–20 minutes until soft.

Mash: Drain and add coconut milk, maple syrup, cinnamon, and salt. Mash or whip until creamy.

Serve: Garnish with a sprinkle of cinnamon or crushed pecans.
