Lentil Misir Wot with Injera

Prep Time: 15 minutes | Cook Time: 30 minutes | Serves: 4

Ingredients:

  • 1 cup red lentils

  • 1 tbsp olive oil

  • 1 cup chopped onion

  • 2 garlic cloves, minced

  • 1 tbsp berbere spice blend

  • 1 tbsp tomato paste

  • 3 cups vegetable broth

  • Sea salt to taste

Instructions:

  • Prep Lentils: Rinse lentils well.
  • Cook Base: Heat olive oil in a pot, sauté onions until golden. Add garlic, berbere, and tomato paste, stirring well.
  • Simmer: Add lentils and broth, cook until lentils are tender and thickened. Serve with injera.
