Cabbage Rolls with Lentil-Mushroom Filling

Benefits: Cabbage supports skin detox and digestion, while mushrooms provide selenium and antioxidants. Lentils add iron and zinc for regeneration and post-acne healing.

Prep Time: 20 minutes | Cook Time: 40 minutes | Serves: 2

Ingredients:

  • 4 large cabbage leaves

  • 1/2 cup cooked lentils

  • 1/2 cup mushrooms, finely chopped

  • 1/4 onion, chopped

  • 1 tbsp tomato paste

  • 1 tbsp olive oil

  • 1 cup crushed tomatoes

  • Sea salt and black pepper

Instructions:

  • Prep Cabbage: Boil leaves for 2–3 minutes until soft.

  • Sauté Filling: Cook onion and mushrooms in olive oil. Add lentils, tomato paste, salt, and pepper.

  • Roll & Bake: Place filling into each cabbage leaf, roll, and place in a baking dish. Cover with crushed tomatoes and bake at 375°F for 30–35 minutes.

  • Serve: Garnish with fresh parsley.

  • Use cremini or shiitake mushrooms for added nutrients.

  • Add grated carrot to the filling for extra vitamin A.
