Herbed White Bean & Leek Cassoulet

Benefits: White beans provide protein and biotin to support strong, glowing skin. Leeks are gentle prebiotics that feed gut flora, improving skin clarity from within. Olive oil and thyme bring anti-inflammatory and restorative properties.

Prep Time: 15 minutes | Cook Time: 30 minutes | Serves: 2

Ingredients:

  • 1 cup cooked white beans (cannellini or navy)

  • 1 leek, thinly sliced

  • 1 garlic clove, minced

  • 1 tomato, chopped

  • 1 tbsp olive oil

  • 1 tsp thyme

  • 1 cup vegetable broth

Instructions:

  • Sauté Base: Cook garlic and leeks in olive oil for 5–7 minutes. Add tomatoes and thyme.

  • Simmer: Stir in beans and broth. Simmer 20 minutes until thickened and stewy.

  • Serve: Spoon into bowls and garnish with parsley or lemon zest.
