Lemon Raspberry Tartlets

Benefits: Lemons provide vitamin C for skin brightening, while raspberries offer antioxidants for repair and protection.

Prep Time: 20 minutes | Cook Time: 10 minutes | Serves: 6

Ingredients:

  • 1 cup almond flour
  • 2 tbsp coconut oil (melted)
  • 1 tbsp honey
  • 1/2 cup Greek yogurt (or coconut yogurt for dairy-free)
  • Juice and zest of 1 lemon
  • 1/2 cup fresh raspberries

Instructions:

  1. Preheat oven to 350°F (175°C). Mix almond flour, coconut oil, and honey to form a dough.
  2. Press the dough into mini tart pans and bake for 8-10 minutes until golden. Cool completely.
  3. Mix Greek yogurt with lemon juice and zest. Spoon into tart shells.
  4. Top with raspberries and serve immediately.
