Coconut Lime Fish Soup

Ingredients:

  • 1 lb white fish fillets (such as cod or halibut)
  • 1 can coconut milk (full-fat)
  • 2 cups fish or vegetable broth
  • 1 small onion (diced)
  • 2 cloves garlic (minced)
  • 1 tsp grated ginger
  • 1/2 tsp turmeric
  • 1 red chili (optional, thinly sliced)
  • 1 cup cherry tomatoes (halved)
  • Juice of 2 limes
  • 2 tbsp olive oil
  • Fresh cilantro for garnish
  • Salt and pepper to taste

Instructions:

  1. Sauté the Aromatics:
    Heat olive oil in a large pot over medium heat. Add onion, garlic, ginger, and turmeric, sautéing until fragrant (about 3 minutes).

  2. Add Liquid Ingredients:
    Pour in the coconut milk and broth, stirring to combine. Bring to a gentle simmer.

  3. Add Vegetables:
    Stir in cherry tomatoes and chili (if using). Simmer for 5 minutes.

  4. Cook the Fish:
    Gently place the fish fillets into the soup. Cover and simmer for 8-10 minutes, or until the fish is cooked through and flakes easily.

  5. Finish with Lime:
    Remove the pot from heat and stir in lime juice.

  6. Serve and Garnish:
    Ladle the soup into bowls and garnish with fresh cilantro. Serve hot with crusty bread or steamed jasmine rice.
