Sweet Potato Brownies

Ingredients:

  • 1 cup mashed sweet potato (cooked and cooled)
  • 1/4 cup almond butter
  • 1/4 cup cocoa powder
  • 1/4 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1/4 tsp baking powder

Instructions:

  1. Preheat oven to 350°F (175°C). Line a small baking pan with parchment paper.
  2. Mix all ingredients in a bowl until smooth.
  3. Pour the batter into the pan and smooth the top.
  4. Bake for 25-30 minutes or until a toothpick comes out clean.
  5. Let cool before slicing into squares.
