Haitian Veggie Bowl with Pikliz-Glazed Roasted Carrots

Ingredients:

  • 2 carrots, peeled and sliced

  • 1 tbsp olive oil

  • 1 cup cooked coconut rice

  • 1/2 cup shredded purple cabbage

  • 1 small radish, thinly sliced

Instructions:
