Haitian Veggie Bowl with Pikliz-Glazed Roasted Carrots

Ingredients:

  • 2 carrots, peeled and sliced

  • 1 tbsp olive oil

  • 1 tbsp pikliz brine (or substitute with white vinegar + chili flakes)

  • 1 cup cooked coconut rice

  • 1/2 cup shredded purple cabbage

  • 1 small radish, thinly sliced

  • 1 tbsp chopped parsley (optional)

Instructions:

  • Roast Carrots: Preheat oven to 400°F. Toss carrots with olive oil and pikliz brine. Spread on a baking sheet and roast for 25 minutes until tender and slightly caramelized.

  • Assemble Bowl: Divide coconut rice between two bowls. Top with roasted carrots, cabbage, and radish.

  • Finish: Garnish with parsley, avocado slices, or additional pikliz if desired.
