Haitian Veggie Bowl with Pikliz-Glazed Roasted Carrots

Posted by Manjeri Skincare Team on

Benefits: Pikliz brine offers fermented probiotics that support gut health and clearer skin. Carrots are rich in beta-carotene, which converts to vitamin A to boost radiance, while coconut rice delivers healthy fats that nourish the skin barrier.

Skin Concern: Acne-prone skin, congestion, post-breakout recovery

Prep Time: 20 minutes | Roast Time: 25 minutes | Serves: 2

Ingredients:

  • 2 carrots, peeled and sliced

  • 1 tbsp olive oil

  • 1 tbsp pikliz brine (or substitute with white vinegar + chili flakes)

  • 1 cup cooked coconut rice

  • 1/2 cup shredded purple cabbage

  • 1 small radish, thinly sliced

  • 1 tbsp chopped parsley (optional)

Instructions:

  • Roast Carrots: Preheat oven to 400°F. Toss carrots with olive oil and pikliz brine. Spread on a baking sheet and roast for 25 minutes until tender and slightly caramelized.

  • Assemble Bowl: Divide coconut rice between two bowls. Top with roasted carrots, cabbage, and radish.

  • Finish: Garnish with parsley, avocado slices, or additional pikliz if desired.

Shopping Tips:

  • Look for traditional Haitian pikliz or make your own using cabbage, vinegar, garlic, and Scotch bonnet peppers.

  • Use full-fat canned coconut milk when cooking rice for rich flavor and glow-boosting hydration.

Cooking Tips:

  • Roast extra carrots to have glow-up ingredients ready for salads and wraps.

  • Add a squeeze of lime or a spoonful of tahini for extra flavor and skin benefits.
