Golden Glow Sweet Potato Soup

Ingredients:

  • 2 medium sweet potatoes (peeled and cubed)
  • 1 small onion (diced)
  • 2 cloves garlic (minced)
  • 1 tsp turmeric
  • 1/2 tsp paprika
  • 3 cups vegetable broth
  • 1/2 cup coconut milk

Instructions:

  1. Sauté onions and garlic in olive oil until softened.
  2. Add sweet potatoes, turmeric, and paprika, stirring well.
  3. Pour in vegetable broth and bring to a boil. Reduce heat and simmer until potatoes are tender (20-25 minutes).
  4. Blend soup until smooth, then stir in coconut milk.
  5. Serve warm and garnish with fresh herbs.
