Beet & Ginger Glow Salad

Ingredients:

  • 2 medium beets (peeled and grated)
  • 1-inch piece ginger (grated)
  • 2 cups mixed greens (spinach, arugula, or kale)
  • 1/4 cup walnuts (chopped)
  • 1/4 cup goat cheese (crumbled)
  • 1/2 avocado (sliced)
  • 2 tbsp pumpkin seeds
  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1 tsp honey
  • Juice of 1/2 lemon
  • Salt and pepper to taste

Instructions:

  1. In a large bowl, combine grated beets, grated ginger, and mixed greens.
  2. Add walnuts, goat cheese, avocado, and pumpkin seeds.
  3. In a small jar, whisk together olive oil, apple cider vinegar, honey, lemon juice, salt, and pepper.
  4. Drizzle the dressing over the salad and toss gently to coat evenly.
  5. Serve immediately and enjoy a nutrient-packed skin boost!
