Creamy Mac and Cheese

Prep Time: 15 minutes | Cook Time: 20 minutes | Serves: 3

Ingredients:

  • 1 1/2 cups elbow macaroni or gluten-free pasta

  • 1/2 cup yukon potato purée

  • 1/2 cup Greek yogurt

  • 1/4 cup shredded cheddar cheese

  • 1 tbsp olive oil

  • 1 tbsp nutritional yeast

  • 1/4 tsp garlic powder

  • Sea salt and black pepper to taste

Instructions:

Cook Pasta: Boil pasta according to package instructions. Drain and set aside.

Mix Sauce: In a pot, combine sweet potato purée, Greek yogurt, olive oil, cheddar, nutritional yeast, garlic powder, salt, and pepper. Stir over low heat until smooth.

Combine: Add pasta to the sauce and toss until fully coated.

Serve: Garnish with cracked pepper or a sprinkle of nutritional yeast.
