Cilantro Lime Shrimp Tacos with Avocado Slaw

Ingredients:
For the Shrimp:

  • 10–12 medium shrimp, peeled and deveined

  • 1 tbsp olive oil

  • Juice of 1 lime

  • Zest of 1/2 lime

  • 1 garlic clove, minced

  • 1 tbsp chopped cilantro

  • 1/2 tsp smoked paprika

  • Sea salt and black pepper to taste

For the Avocado Slaw:

  • 1 cup shredded red or green cabbage

  • 1/2 avocado, mashed

  • 1 tbsp lime juice

  • 1 tbsp Greek yogurt or dairy-free yogurt

  • 1 tbsp chopped cilantro

  • Pinch of sea salt

To Serve:

  • 4 small corn tortillas (or gluten-free tortillas of choice)

  • Optional toppings: sliced radishes, microgreens, extra lime wedges

Instructions:

  • Toss the shrimp with olive oil, lime juice and zest, garlic, paprika, cilantro, salt, and pepper. Let marinate for 10–15 minutes.
  • In a bowl, combine shredded cabbage, mashed avocado, lime juice, yogurt, cilantro, and a pinch of salt to create a creamy slaw.
  • Heat a skillet over medium heat and cook the shrimp for 2–3 minutes per side until pink and cooked through.
  • Warm the tortillas in a dry pan or over an open flame.
  • To assemble, layer each tortilla with avocado slaw, a few shrimp, and your favorite glow-friendly toppings like radishes or microgreens.

Shopping Tips:

  • Shrimp: Choose wild-caught or sustainably farmed shrimp and look for certifications like Best Aquaculture Practices.

  • Tortillas: Look for corn tortillas made with only corn, lime, and water for fewer additives.

  • Cabbage: Red cabbage has more skin-loving anthocyanins than green, but either works.

Cooking Tips:
