Almond Fig Oat Crumble Bars

Prep Time: 15 minutes (plus 30 minutes bake time) | Serves: 6

Ingredients:

  • 1 cup rolled oats

  • 3/4 cup almond flour

  • 1/2 tsp cinnamon

  • 1/4 tsp sea salt

  • 1/4 cup melted coconut oil

  • 2 tbsp maple syrup

  • 1/2 tsp vanilla extract

  • 1/2 cup dried figs, soaked in warm water for 10 minutes

  • 1 tbsp lemon juice

  • 1 tsp lemon zest

  • 1 tbsp water (as needed)

  • Optional: sliced almonds for topping

Instructions:

  • Preheat the oven to 350°F and line a small baking dish with parchment paper.
    In a food processor, blend soaked figs with lemon juice, lemon zest, and a splash of water until a thick jam forms.
  • In a separate bowl, mix oats, almond flour, cinnamon, and sea salt. Add melted coconut oil, maple syrup, and vanilla extract. Stir until crumbly.
  • Press 2/3 of the mixture firmly into the bottom of the dish to form the base. Spread the fig filling evenly on top. Sprinkle the remaining oat mixture over the fig layer and press lightly. Add sliced almonds on top if using.
  • Bake for 28–30 minutes or until golden and crisp. Let cool completely before slicing into bars.

  • Almond Flour: Blanched almond flour gives a finer texture than almond meal.
