Almond Fig Oat Crumble Bars

Posted by Manjeri Skincare Team on

Benefits:
Figs are rich in polyphenols and natural enzymes that support skin clarity and elasticity. Almonds provide vitamin E to protect against oxidative stress, while oats contain zinc and silica for healing and glow. Coconut oil delivers essential fatty acids that help maintain the skin barrier.

Skin Concern: Dryness, uneven texture, environmental damage

Prep Time: 15 minutes (plus 30 minutes bake time) | Serves: 6

Ingredients:

  • 1 cup rolled oats

  • 3/4 cup almond flour

  • 1/2 tsp cinnamon

  • 1/4 tsp sea salt

  • 1/4 cup melted coconut oil

  • 2 tbsp maple syrup

  • 1/2 tsp vanilla extract

  • 1/2 cup dried figs, soaked in warm water for 10 minutes

  • 1 tbsp lemon juice

  • 1 tsp lemon zest

  • 1 tbsp water (as needed)

  • Optional: sliced almonds for topping

Instructions:

  • Preheat the oven to 350°F and line a small baking dish with parchment paper.
In a food processor, blend soaked figs with lemon juice, lemon zest, and a splash of water until a thick jam forms.
  • In a separate bowl, mix oats, almond flour, cinnamon, and sea salt. Add melted coconut oil, maple syrup, and vanilla extract. Stir until crumbly.
  • Press 2/3 of the mixture firmly into the bottom of the dish to form the base. Spread the fig filling evenly on top. Sprinkle the remaining oat mixture over the fig layer and press lightly. Add sliced almonds on top if using.
  • Bake for 28–30 minutes or until golden and crisp. Let cool completely before slicing into bars.

Shopping Tips:

  • Figs: Use dried Turkish or Mission figs for a deep, honeyed flavor—check they’re unsulfured.

  • Almond Flour: Blanched almond flour gives a finer texture than almond meal.

  • Oats: Choose gluten-free certified oats if needed and avoid quick-cook varieties.

Cooking Tips:

  • Let the bars cool fully to avoid crumbling when slicing.

  • Store in the fridge for up to 5 days for a firmer texture and easier grab-and-go dessert.

  • Add chopped walnuts or pecans for a crunchier topping and added skin benefits.

These wholesome crumble bars are subtly sweet, packed with glow-boosting ingredients, and perfect for a Sunday bake that feeds both your skin and your soul.
