Brazilian Moqueca (Coconut Fish Stew)

Ingredients:

  • ¾ lb white fish (snapper or cod), cut into chunks

  • ½ onion, sliced

  • ½ bell pepper, sliced

  • 1 tomato, diced

  • 1 clove garlic, minced

  • 1 cup coconut milk

  • 1 tbsp lime juice

  • 1 tbsp olive oil

  • 1 tbsp chopped cilantro

  • Sea salt to taste

Instructions:

  • Sauté Base: In olive oil, sauté onions, bell peppers, and garlic until soft. Add tomatoes and cook down.

  • Simmer Fish: Layer fish into the pan. Pour in coconut milk and lime juice. Simmer gently for 10–12 minutes until the fish flakes easily.

  • Finish: Top with chopped cilantro and serve with rice or cassava.
