Veggie-Packed Egg Bites

Benefits: Eggs are rich in protein and biotin for skin repair, while spinach and bell peppers provide antioxidants and vitamin C to brighten the skin.

Prep Time: 10 minutes | Cook Time: 20 minutes | Serves: 6

Ingredients:

  • 6 large eggs
  • 1/4 cup milk (dairy or unsweetened non-dairy)
  • 1/2 cup spinach (chopped)
  • 1/4 cup red bell pepper (diced)
  • 1/4 cup mushrooms (chopped)
  • 1/4 cup shredded cheddar cheese (optional)
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 350°F (175°C). Lightly grease a muffin tin.
  2. In a bowl, whisk eggs and milk until smooth. Season with salt and pepper.
  3. Divide spinach, bell peppers, and mushrooms evenly among the muffin cups.
  4. Pour the egg mixture over the veggies, filling each cup about 3/4 full.
  5. Sprinkle with shredded cheese if desired.
  6. Bake for 18-20 minutes or until the egg bites are set and slightly golden on top.
