Benefits: Eggs provide complete protein and biotin to strengthen skin and hair, while spinach and zucchini are rich in antioxidants and hydrating minerals. The avocado herb drizzle adds healthy fats and vitamin E for smooth, supple skin.

Skin Concern: Dry, irritated skin; loss of firmness; hormonal breakouts

Prep Time: 10 minutes | Cook Time: 5 minutes | Serves: 2

Ingredients:

For the Omelette:

  • 4 eggs

  • 1 cup spinach, chopped

  • ½ small zucchini, thinly sliced

  • 1 tbsp olive oil

  • Pinch of sea salt and black pepper

For the Avocado Herb Drizzle:

  • ½ ripe avocado

  • Juice of ½ lemon

  • 1 tbsp fresh parsley or cilantro

  • 2 tbsp water

  • Pinch of sea salt

Instructions:

  • Sauté Veggies: Heat olive oil in a non-stick skillet. Sauté zucchini and spinach for 2–3 minutes until tender. Set aside.

  • Whisk & Cook: Whisk eggs with salt and pepper. Pour into the pan and swirl to coat the bottom evenly.

  • Fill: Once the omelette begins to set, add sautéed veggies to one half. Fold the other side over and cook for 1 more minute.

  • Blend Drizzle: While omelette finishes, blend avocado, lemon juice, herbs, water, and salt until smooth.

  • Serve: Slice omelette in half and top with avocado herb drizzle.

Shopping Tips:

  • Eggs: Use pasture-raised or omega-3 enriched eggs for the best skin-supportive nutrition.

  • Zucchini: Choose firm, glossy zucchini with no soft spots for peak freshness.

Cooking Tips:

  • Add protein: Sprinkle with hemp seeds or serve with a spoonful of hummus.

  • Flavor twist: Add a pinch of cumin or smoked paprika to the eggs for depth.

This vibrant omelette is a glowing start to the day, combining protein, hydration, and skin-calming nutrients in every bite.
