Spinach & Zucchini Omelette with Avocado Herb Drizzle

Ingredients:

For the Omelette:

  • 4 eggs

  • 1 cup spinach, chopped

  • ½ small zucchini, thinly sliced

  • 1 tbsp olive oil

  • Pinch of sea salt and black pepper

For the Avocado Herb Drizzle:

  • ½ ripe avocado

  • Juice of ½ lemon

  • 1 tbsp fresh parsley or cilantro

  • 2 tbsp water

  • Pinch of sea salt

Instructions:

  • Sauté Veggies: Heat olive oil in a non-stick skillet. Sauté zucchini and spinach for 2–3 minutes until tender. Set aside.

  • Whisk & Cook: Whisk eggs with salt and pepper. Pour into the pan and swirl to coat the bottom evenly.

  • Fill: Once the omelette begins to set, add sautéed veggies to one half. Fold the other side over and cook for 1 more minute.

  • Blend Drizzle: While omelette finishes, blend avocado, lemon juice, herbs, water, and salt until smooth.

  • Serve: Slice omelette in half and top with avocado herb drizzle.
