Lemon Herb Grilled Chicken with Tzatziki

Posted by Manjeri Skincare Team on

Benefits: Chicken is a lean protein that supports skin repair, while the yogurt in tzatziki provides probiotics to maintain a healthy gut-skin connection. Cucumbers in the tzatziki hydrate and cool the skin.

Skin Concern: Dry or stressed skin

Prep Time: 10 minutes | Cook Time: 20 minutes | Serves: 4

Ingredients:

For the Chicken:

  • 4 chicken breasts
  • 3 tbsp olive oil
  • Juice of 2 lemons
  • 1 tsp dried oregano
  • Salt and pepper to taste

For the Tzatziki:

  • 1 cup Greek yogurt
  • 1/2 cucumber (grated and drained)
  • 1 clove garlic (minced)
  • 1 tbsp olive oil
  • 1 tbsp fresh dill (chopped)
  • Juice of 1/2 lemon

Instructions:

  1. Marinate the Chicken:
In a bowl, combine olive oil, lemon juice, oregano, salt, and pepper. Add chicken breasts, ensuring they are fully coated. Marinate for at least 20 minutes (longer for deeper flavor).

  2. Grill the Chicken:
Preheat the grill to medium heat. Grill chicken for 6-8 minutes on each side, or until fully cooked (internal temperature of 165°F/74°C).

  3. Prepare the Tzatziki:
In a bowl, mix Greek yogurt, grated cucumber (squeeze out excess liquid), garlic, olive oil, dill, and lemon juice. Stir until well combined and creamy.

  4. Serve:
Plate the grilled chicken alongside the tzatziki. Pair with a fresh salad or roasted vegetables for a complete meal.

Shopping Tips:

  • Chicken: Look for organic or free-range chicken for better flavor and quality.
  • Greek Yogurt: Use full-fat Greek yogurt for a creamier texture and richer flavor.
  • Cucumber: Choose firm cucumbers with smooth, dark green skin.

Cooking Tips:

  • Even Cooking: Pound the chicken breasts to an even thickness for quicker, more uniform cooking.
  • Enhanced Marinade: Add a sprinkle of smoked paprika or chili flakes to the marinade for extra depth and a touch of heat.
  • Zesty Tzatziki: Use fresh lemon juice and extra dill for a bright, vibrant flavor.

This is a delicious, skin-nourishing meal perfect for a light, healthy dinner with Mediterranean flair!
