Coconut Lime Panna Cotta

Prep Time: 15 minutes (plus 4 hours chilling) | Serves: 4

Ingredients:

  • 2 cups coconut milk (full-fat)
  • 1/4 cup honey or maple syrup
  • Juice of 1 lime
  • 1 tsp lime zest
  • 1 tbsp gelatin powder

Instructions:

  1. Heat coconut milk and honey in a saucepan over medium heat until warm (do not boil).
  2. Sprinkle gelatin over the mixture and whisk until fully dissolved. Remove from heat.
  3. Stir in lime juice and zest, then pour into ramekins.
  4. Refrigerate for 4 hours or until set.
  5. Serve chilled, optionally garnished with lime zest or toasted coconut flakes.
