Chicken Salad with Grapes, Walnuts & Yogurt-Herb Dressing

Ingredients:

  • 1 1/2 cups cooked shredded chicken breast (grilled or poached)

  • 1/2 cup red grapes, halved

  • 1/4 cup chopped celery

  • 1/4 cup chopped walnuts

  • 1 tbsp chopped fresh parsley

  • 1 tbsp chopped fresh dill

  • 1/2 cup plain Greek yogurt

  • 1 tsp Dijon mustard

  • 1 tbsp lemon juice

  • Sea salt and black pepper to taste

  • Optional: butter lettuce leaves, sliced avocado, or sourdough for serving

Instructions:
In a large bowl, combine the shredded chicken, grapes, celery, walnuts, parsley, and dill.
In a small bowl, whisk together the Greek yogurt, Dijon mustard, lemon juice, salt, and pepper.
Pour the dressing over the chicken mixture and stir until everything is well coated.
Serve chilled on a bed of butter lettuce, in a sandwich, or with sliced avocado on sourdough toast.
