Polish Stuffed Cabbage Rolls (Gołąbki)

Ingredients:

  • 1 large green cabbage
  • 1 lb ground beef or pork
  • 1/2 cup cooked white rice
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 egg
  • Salt and black pepper to taste

For the Tomato Sauce:

  • 2 cups crushed tomatoes
  • 1 tbsp tomato paste
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp dried thyme
  • Salt and pepper to taste

Instructions:

  • Prepare the Cabbage: Bring a large pot of water to a boil. Carefully remove the core from the cabbage and place the whole head into the boiling water. As the leaves soften, gently peel them off and set aside.
  • Make the Filling: In a bowl, combine ground meat, cooked rice, chopped onion, garlic, egg, salt, and pepper. Mix until just combined.
  • Assemble the Rolls: Place a portion of filling onto each cabbage leaf. Fold in the sides and roll tightly to form a bundle.
  • Prepare the Sauce: In a bowl, mix crushed tomatoes, tomato paste, olive oil, paprika, thyme, salt, and pepper.
  • Cook the Rolls: Spread a thin layer of sauce on the bottom of a baking dish or pot. Arrange cabbage rolls seam-side down and pour remaining sauce over the top. Cover and bake at 350°F for 1 hour to 1 hour 15 minutes until tender.
  • Serve: Spoon extra sauce over the rolls and serve warm.
