Creamy Jerk Rasta Pasta with Chicken

Ingredients:

  • 12 oz penne or fettuccine pasta

  • 1 lb boneless, skinless chicken breast, sliced

  • 2 tbsp jerk seasoning

  • 2 tbsp olive oil

  • 1 red bell pepper, sliced

  • 1 yellow bell pepper, sliced

  • 1 green bell pepper, sliced

  • 3 cloves garlic, minced

  • 1 cup heavy cream

  • 1/2 cup grated parmesan cheese

  • Sea salt and black pepper, to taste

  • Fresh parsley or scallions, for garnish

Instructions:

  • Cook pasta according to package instructions. Drain and set aside.

  • Toss chicken with jerk seasoning until evenly coated.

  • Heat olive oil in a large skillet over medium heat and cook chicken until browned and cooked through. Remove and set aside.

  • In the same skillet, add bell peppers and garlic and sauté until softened.

  • Lower heat and stir in heavy cream, bringing to a gentle simmer.

  • Add parmesan cheese and stir until the sauce thickens slightly.

  • Return chicken to the skillet and toss to coat in the sauce.

  • Add cooked pasta and gently toss until everything is evenly combined.

  • Season with salt and black pepper as needed.

  • Serve warm, garnished with parsley or scallions.
