Smothered Turkey Wings over Rice

Ingredients:

For the Turkey Wings:

  • 3 to 4 turkey wings, split

  • 1 tbsp olive oil

  • 1 tsp onion powder

  • ½ tsp dried thyme

  • ½ tsp sea salt

  • ½ tsp black pepper

For the Gravy:

  • 1 tbsp butter or oil

  • 1 medium onion, sliced

  • 2 cloves garlic, minced

  • 2 tbsp all-purpose flour

  • 2 ½ cups chicken broth

  • ½ tsp thyme

  • ¼ tsp black pepper

  • Pinch sea salt

For the Rice:

  • 1 cup white or brown rice

  • 2 cups water or broth

  • Pinch sea salt

Instructions:

  • Season and Sear the Turkey Wings: Pat turkey wings dry and rub with olive oil, paprika, garlic powder, onion powder, thyme, salt, and pepper. Heat a large skillet over medium-high heat and sear wings on all sides until browned, then set aside.

  • Prepare the Gravy: In the same pan, add butter and sauté onions until soft and lightly caramelized. Stir in garlic and cook until fragrant. Sprinkle in flour and whisk to form a roux, then slowly add chicken broth while whisking until smooth and thickened. Season with thyme, salt, and pepper.

  • Smother and Bake: Preheat oven to 350°F. Place turkey wings in a baking dish and pour gravy over them. Cover with foil and bake for 1 hour 15 minutes, then uncover and bake an additional 25 to 30 minutes until tender and fully cooked.

  • Cook the Rice: While the turkey cooks, bring water or broth to a boil. Add rice and salt, reduce heat to low, cover, and simmer until tender. Fluff with a fork.

  • Serve: Plate turkey wings over rice and spoon generous amounts of gravy on top.
