Roast Cajun Chicken Breast with Pomme Purée

Ingredients:

  • Pinch sea salt

For the Pomme Purée:

  • 2 cups Yukon Gold potatoes, peeled and chopped

  • 3 tbsp butter

  • ½ cup warm milk or cream

  • ½ tsp sea salt

For the Mixed Greens:

  • 2 cups organic mixed greens

  • 1 tbsp olive oil

  • 1 tsp lemon juice

  • Pinch sea salt

Instructions:

  • Prepare the Chicken: Preheat oven to 375°F. Rub chicken breasts with olive oil and season with Cajun seasoning, paprika, garlic powder, salt, and pepper. Sear in a hot pan for 3 to 4 minutes per side, then transfer to the oven and roast for 15 to 18 minutes until fully cooked.

  • Make the Pomme Purée: Boil potatoes until tender, then drain and mash until smooth. Stir in butter, warm milk or cream, and salt until silky and creamy.

  • Prepare the Beurre Blanc: In a saucepan, combine white wine, vinegar, and shallots. Simmer until reduced by half. Lower heat and whisk in butter one cube at a time until emulsified and smooth. Season lightly with salt.

  • Dress the Greens: Toss mixed greens with olive oil, lemon juice, and a pinch of salt just before serving.

  • Serve: Plate a scoop of pomme purée, top with sliced Cajun chicken, drizzle with beurre blanc, and serve alongside fresh greens.
