Posted by Manjeri Skincare Team on

Benefits: This fresh, herb-forward salad is packed with hydrating and detoxifying ingredients that support a clear, balanced complexion. Zucchini has a high water content to promote skin hydration and reduce puffiness, while basil and mint provide antibacterial and calming properties that help soothe irritation. Feta adds protein and calcium to support skin structure, and olive oil delivers healthy fats that enhance glow and improve nutrient absorption.

Skin Concern: Puffiness and water retention

Prep Time: 15 minutes | Cook Time: 0 minutes | Serves: 2–3

Ingredients:

  • 2 medium zucchinis, thinly sliced or shaved into ribbons
  • 1/4 cup fresh basil leaves, torn
  • 1/4 cup fresh mint leaves, torn
  • 1/3 cup crumbled feta cheese
  • 2 tbsp extra virgin olive oil
  • Juice of 1 lemon
  • Salt and black pepper to taste
  • 1 tbsp toasted pine nuts or almonds (optional)

Instructions:

  • Prepare the Zucchini: Using a mandoline or vegetable peeler, slice zucchini into thin ribbons or rounds. Place in a large bowl.
  • Add Herbs and Feta: Toss in fresh basil, mint, and crumbled feta, distributing evenly throughout the salad.
  • Dress the Salad: Drizzle olive oil and fresh lemon juice over the mixture. Season with salt and black pepper.
  • Toss and Serve: Gently toss everything together until well coated. Top with toasted nuts if using and serve immediately.

Shopping Tips:

  • Choose firm, glossy zucchinis with no soft spots
  • Fresh herbs should be vibrant and aromatic for best flavor and benefits
  • Opt for high-quality feta packed in brine for better texture

Cooking Tips:

  • Slice zucchini thinly for the best texture and flavor absorption
  • Add dressing just before serving to keep the salad crisp
  • Lightly salt zucchini and let sit for a few minutes if you prefer a softer texture

This light, refreshing salad delivers hydration and freshness while supporting a de-puffed, naturally radiant glow.
