Sausage Breakfast Sandwich

Posted by Manjeri Skincare Team on

Benefits: This satisfying breakfast sandwich combines protein-rich sausage and eggs with avocado and fresh greens for a balanced mix of nutrients that support healthy skin. Eggs provide protein, vitamin A, selenium, and choline to support normal skin renewal, while avocado contributes vitamin E and monounsaturated fats that help maintain the skin’s natural moisture barrier. Adding spinach provides vitamin C and beta-carotene, while a whole-grain English muffin offers fiber for a more nutrient-dense take on the classic breakfast sandwich.

Skin Concern: Dry Skin

Prep Time: 10 minutes | Cook Time: 15 minutes | Serves: 2

Ingredients:

  • 2 whole-grain English muffins
  • 2 breakfast sausage patties
  • 2 large eggs
  • 2 slices sharp cheddar cheese
  • 1/2 ripe avocado, thinly sliced
  • 1 cup baby spinach
  • 1 tsp unsalted butter
  • 1 tsp olive oil
  • Salt and freshly ground black pepper, to taste
  • Crushed red pepper flakes, optional

For the Dijon Spread:

  • 2 tbsp plain Greek yogurt
  • 1 tsp Dijon mustard
  • 1/2 tsp honey
  • 1/2 tsp fresh lemon juice

Instructions:

  • Prepare the Spread: Mix the Greek yogurt, Dijon mustard, honey, and lemon juice in a small bowl until smooth. Set aside.
  • Cook the Sausage: Heat olive oil in a skillet over medium heat. Add the sausage patties and cook according to package directions or until fully cooked through. During the final minute, place a slice of cheddar over each patty and allow it to melt.
  • Toast the English Muffins: Split the English muffins and toast until the cut sides are golden and slightly crisp.
  • Wilt the Spinach: Add the spinach to the skillet and sauté for about 1 minute, just until wilted. Remove and set aside.
  • Fry the Eggs: Reduce the heat to medium-low and melt the butter. Crack the eggs into the skillet and cook until the whites are completely set but the yolks remain golden and runny. Season with salt and freshly ground black pepper.
  • Assemble the Sandwiches: Spread the Dijon mixture over the bottom half of each toasted English muffin. Layer with spinach, avocado, the sausage and melted cheddar, and a sunny-side-up egg.
  • Finish: Sprinkle with crushed red pepper flakes if desired and add the top half of the English muffin.
  • Serve: Enjoy immediately. When the sandwich is pressed together, the runny egg yolk creates a rich, creamy sauce that coats the sausage, cheese, and toasted English muffin.

Shopping Tips:

  • Sausage: Choose high-quality breakfast sausage made with pork, chicken, or turkey and a simple ingredient list.
  • Eggs: Fresh eggs are especially useful for sunny-side-up eggs because the whites tend to remain compact around the yolk.
  • English Muffins: Whole-grain English muffins provide additional fiber while maintaining the classic toasted texture.
  • Avocado: Choose an avocado that yields slightly to gentle pressure without feeling overly soft.
  • Cheddar: Buy a block of sharp cheddar and slice it yourself for better flavor and melting.

Cooking Tips:

  • Shape homemade sausage patties slightly wider than the English muffins because they'll shrink as they cook.
  • Keep the heat medium-low when frying the eggs so the whites can set without overcooking the yolks.
  • Cover the skillet for the final 30–60 seconds if the egg whites need help setting while you want to preserve a runny center.
  • Toast the English muffins well so they can absorb some of the egg yolk without becoming soggy.
  • For extra heat, add a thin layer of chili crisp or hot honey.
  • Serve immediately—the contrast between the crisp English muffin and warm, runny yolk is what makes this sandwich especially good.

This Sausage Breakfast Sandwich layers a toasted English muffin with savory sausage, melted cheddar, creamy avocado, spinach, and a perfectly runny fried egg for a hearty breakfast with an irresistible golden yolk in every bite.
