  • 1 tbsp balsamic vinegar
  • 1 tsp Worcestershire sauce
  • Salt and black pepper to taste

Instructions:

  • Prepare the Lamb: Preheat oven to 375°F. Lay the butterflied lamb flat on a clean surface and pat dry. Rub evenly with olive oil, garlic, rosemary, thyme, smoked paprika, salt, and pepper to build a deeply aromatic base.
  • Add the Filling: Spread spinach, sun-dried tomatoes, and feta across the surface of the lamb. Roll tightly into a log and secure with kitchen twine to hold the filling in place during cooking.
  • Sear the Lamb: Heat a large oven-safe skillet over medium-high heat. Sear the lamb on all sides until a golden crust forms, locking in juices and flavor.
  • Roast: Transfer to the oven and roast for 60–75 minutes, or until the internal temperature reaches your desired doneness (135°F for medium-rare). Remove and let rest for 10–15 minutes before slicing to retain moisture.
  • Caramelize the Onions: In a separate pan, heat butter and olive oil over medium-low heat. Add onions and cook slowly, stirring occasionally, until deeply golden and soft, about 20–25 minutes.
  • Build the Au Jus: Add broth, balsamic vinegar, and Worcestershire sauce to the onions. Simmer gently for 10 minutes, allowing the flavors to concentrate into a rich, glossy sauce. Season to taste.
  • Serve: Slice the lamb into rounds and spoon the caramelized onion au jus over the top just before serving.
