Deviled Eggs

Ingredients:

  • 6 large eggs

  • 1 tsp apple cider vinegar or fresh lemon juice
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika, plus more for garnish
  • Salt and freshly ground black pepper, to taste
  • 1 tbsp fresh chives, finely chopped
  • Fresh dill, for garnish (optional)

Instructions:

  • Cook the Eggs: Place eggs in a saucepan and cover with cold water. Bring to a boil, then remove from heat, cover, and let stand for 10–12 minutes. Transfer the eggs to an ice bath until completely cooled.
  • Prepare the Filling: Peel the eggs and slice them in half lengthwise. Carefully remove the yolks and place them in a bowl. Mash the yolks with Greek yogurt, mayonnaise, Dijon mustard, apple cider vinegar, garlic powder, smoked paprika, salt, and pepper until smooth and creamy.
  • Fill the Eggs: Spoon or pipe the yolk mixture back into the egg white halves.
  • Garnish: Sprinkle with smoked paprika and top with chopped chives and fresh dill, if desired.
  • Serve: Refrigerate until ready to serve and enjoy chilled.
