Golden Zucchini Fritters

Ingredients:

  • 2 medium zucchinis, grated

  • 1 egg (or flax egg for dairy-free)

  • 1 tbsp ground flaxseed

  • ½ tsp turmeric powder

  • 1 clove garlic, minced

  • 1 tbsp olive oil (for cooking)

  • Pinch of sea salt (optional)

Instructions:

  • Drain Zucchini: Grate zucchini and squeeze out excess water using a clean cloth.
  • Mix the Base: In a bowl, combine grated zucchini, egg, flaxseed, turmeric, garlic, and sea salt.
  • Cook: Heat olive oil in a nonstick skillet. Drop spoonfuls of the mixture into the pan and flatten slightly. Cook each side for 3–4 minutes until golden.
  • Serve: Enjoy warm, optionally topped with dairy-free yogurt or fresh herbs.
