Creole Jambalaya with Brown Rice

Ingredients:

For the Jambalaya:

  • 1 tbsp olive oil
  • 1/2 lb shrimp, peeled and deveined
  • 1 chicken breast, diced
  • 1 small onion, diced
  • 1 green bell pepper, diced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 can diced tomatoes
  • 2 cups chicken broth
  • 1 cup brown rice
  • 1 tsp paprika
  • 1/2 tsp thyme
  • 1/2 tsp oregano
  • Salt and black pepper to taste

Instructions:

  • Build the Base: Heat olive oil in a large pot. Cook chicken until browned, then remove and set aside.
  • Sauté Vegetables: In the same pot, cook onion, bell pepper, and celery until softened. Add garlic and spices.
  • Simmer: Add tomatoes, broth, and rice. Return chicken to the pot and simmer for 25 minutes.
  • Add Shrimp: Stir in shrimp and cook for 5 to 7 minutes until fully cooked.
  • Serve: Fluff gently and serve warm.
