Berry Chia Pudding

Prep Time: 5 minutes (plus chilling time) | Serves: 2

Ingredients:

  • 1 cup coconut milk
  • ¼ cup chia seeds
  • 1 tbsp honey or maple syrup
  • ½ tsp vanilla extract
  • ½ cup mixed berries (blueberries, strawberries, raspberries)

Instructions:

  1. Mix: Stir coconut milk, chia seeds, honey, and vanilla in a bowl.
  2. Chill: Let sit for 5 minutes, stir again, then refrigerate for at least 2 hours (or overnight).
  3. Serve: Top with fresh berries before serving.
