Whipped White Bean Dip with Roasted Garlic and Lemon

Ingredients:

For the Roasted Garlic:

  • 1 whole garlic bulb
  • 1 tbsp olive oil
  • Pinch of sea salt

For the Whipped Dip:

  • 1 1/2 cups cooked white beans (cannellini or navy beans), drained and rinsed
  • Roasted garlic cloves
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 3 tbsp extra virgin olive oil
  • 2–4 tbsp warm water (as needed for blending)
  • Sea salt to taste
  • Freshly cracked black pepper

Optional Toppings:

  • Olive oil drizzle
  • Chopped parsley or thyme
  • Lemon zest
  • Cracked pepper or chili flakes

Instructions:
Prepare the roasted garlic by preheating the oven to 400°F. Slice the top off the garlic bulb to expose the cloves, drizzle with olive oil, sprinkle lightly with salt, wrap in foil, and roast for 30–35 minutes until soft and golden. Allow to cool slightly, then squeeze the cloves from their skins.

Prepare the dip by adding the white beans, roasted garlic, lemon zest, lemon juice, olive oil, salt, and pepper to a food processor. Blend until smooth and creamy, adding warm water a tablespoon at a time to reach a whipped, airy texture. Taste and adjust seasoning as needed.

Transfer the dip to a serving bowl, swirl the top with a spoon, and finish with olive oil and fresh herbs if desired. Serve warm or at room temperature.
