Shredded Chicken Wet Burrito

Ingredients:

  • ½ cup tomato sauce

For Assembly:

  • 4 large flour tortillas

  • 1 cup cooked rice (optional)

  • 1 cup shredded cheese

  • 1 avocado, sliced

  • Fresh cilantro for garnish

Instructions:

  • Prepare the Filling: Heat olive oil in a skillet over medium heat. Add onion and garlic, cooking until softened. Stir in shredded chicken, cumin, chili powder, paprika, salt, and pepper. Mix in black beans and corn, cooking until heated through.

  • Make the Sauce: In a saucepan, combine enchilada sauce, tomato sauce, cumin, and salt. Simmer for 5 to 7 minutes until slightly thickened.

  • Assemble the Burritos: Lay tortillas flat and add chicken filling, rice if using, and a sprinkle of cheese. Roll tightly into burritos.

  • Bake: Preheat oven to 375°F. Place burritos seam-side down in a baking dish. Pour sauce generously over the top and sprinkle with remaining cheese. Bake for 20 minutes until bubbly.

  • Serve: Top with avocado slices and fresh cilantro before serving.
