Ingredients:

For the Curry:

  • 1 tbsp coconut oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 tsp grated ginger
  • 1 can chickpeas, drained and rinsed
  • 2 cups fresh spinach
  • 1 can coconut milk
  • 1/2 cup diced tomatoes
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1/2 tsp coriander
  • 1/2 tsp paprika
  • Salt and black pepper to taste

For Serving:

  • 2 cups cooked basmati or brown rice
  • Fresh cilantro

Instructions:

  • Build the Base: Heat coconut oil in a pan and sauté onion until soft. Add garlic and ginger, cooking until fragrant.
  • Add Spices: Stir in turmeric, cumin, coriander, and paprika to bloom the spices.
  • Simmer: Add chickpeas, tomatoes, and coconut milk. Let simmer for 15 minutes.
  • Add Greens: Stir in spinach and cook until wilted. Season with salt and pepper.
  • Serve: Spoon over rice and garnish with fresh cilantro.
