Ingredients:

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 6 tbsp unsalted butter, melted
  • 2 tbsp sugar

For the Matcha Cheesecake Filling:

  • 16 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1/2 cup Greek yogurt
  • 1 tbsp culinary-grade matcha powder
  • 1 tsp vanilla extract
  • 1 tbsp cornstarch

For Garnish:

  • 1 tsp matcha powder, for dusting
  • Fresh strawberries (optional)

Instructions:

  • Prepare the Crust: Preheat oven to 325°F. In a bowl, combine graham cracker crumbs, melted butter, and sugar. Press firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then allow to cool slightly.
  • Make the Filling: In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing just until incorporated. Mix in Greek yogurt, matcha powder, vanilla extract, and cornstarch until smooth and evenly colored.
  • Bake the Cheesecake: Pour filling over the prepared crust and smooth the top. Bake for 50–55 minutes, or until the edges are set and the center still has a slight jiggle.
  • Cool Gradually: Turn off the oven and crack the oven door open. Let the cheesecake cool in the oven for 30 minutes before transferring to the refrigerator. Chill for at least 4 hours or overnight.
  • Serve: Dust with matcha powder and garnish with fresh strawberries if desired before slicing and serving.
