Ingredients:

For the Beans:

  • 1 cup dried red beans (or 2 cans, drained and rinsed)
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 1 green bell pepper, diced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1/2 tsp dried thyme
  • 1/2 tsp oregano
  • 4 cups vegetable broth
  • Salt and black pepper to taste

For Serving:

  • 2 cups cooked brown rice
  • Chopped green onions

Instructions:

  • Simmer the Beans: Add beans and broth. Bring to a boil, then reduce to a simmer and cook for 45 to 60 minutes until beans are tender and creamy.
  • Season and Serve: Season with salt and pepper. Serve over brown rice and garnish with green onions.
