Creamy Mushroom Marsala

Ingredients:

  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 16 oz cremini or button mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 shallot, finely chopped
  • 1 cup Marsala wine
  • 3/4 cup vegetable or chicken broth
  • 1/2 cup heavy cream or coconut cream
  • 1 tsp fresh thyme leaves
  • Salt and black pepper to taste
  • Fresh parsley, chopped for garnish

Instructions:

  • Heat olive oil and butter in a large skillet over medium heat until melted and fragrant. Add the sliced mushrooms and cook undisturbed for a few minutes to allow them to brown, then stir and continue cooking until tender and golden.
  • Add garlic and shallots to the pan and sauté until soft and aromatic, about 2 to 3 minutes. Season lightly with salt and pepper.
  • Pour in the Marsala wine, scraping up any browned bits from the bottom of the pan. Let it simmer and reduce by about half to concentrate the flavor.
  • Add the broth and thyme, then allow the mixture to simmer for another 8 to 10 minutes until slightly thickened.
  • Stir in the cream and let it gently simmer until the sauce becomes silky and rich. Adjust seasoning with salt and pepper as needed.
  • Remove from heat, garnish with fresh parsley, and serve warm over pasta, mashed potatoes, or alongside roasted vegetables.
